When I think of comfort food, creating a flavorful hearty vegetarian shepherd’s pie is my go to dish. A warm casserole that is rich and flavorful topped with fluffy mashed potatoes is a meatless wonder.
As I traveled from Buffalo to San Diego to help my daughter and son in law welcome their first child, I had a suitcase packed with potatoes and garlic fresh from my garden. Yes, there were some clothes tucked in there but this trip was all about nurturing. For me, taking care of others almost always includes home cooking.
I decided my first meal for the parents eagerly awaiting their new baby would be our family favorite, Hearty Vegetarian Shepherd’s Pie. By using my freshly dug vegetables, I would make the perfect cozy meal we all needed.
