I love using Italian Herb Blend as a versatile spice mix in my recipes. I grow all of these herbs in my garden.  My rosemary plants are part of my inside landscape for the winter.  I start basil and marjoram plants indoors in the spring.  Oregano, thyme and sage are perennials in my zone so I do not need to plant them each year.

I rely on my dried herb mixes predominantly in the winter. My perennials are hibernating during this time and my fresh herbs, grown indoors, are not as plentiful.  Dried herbs have a stronger and more pungent flavor than fresh herbs.  Home dried herbs have a richer taste than store bought herbs.  When a plant is dried, it is important to note that it loses volume due to the loss of water.  While the herb is now more compact,  it becomes a more concentrated form of the plant.  This means that you cannot use fresh and dry herbs interchangeably because the taste will be different.  My rule of thumb is that when using dried herbs, use 1/3 to 2/3 less than a recipe that calls for fresh herbs.

Ingredients
  

  • 1/2 cup dried basil
  • 1/2 cup dried marjoram
  • 1/2 cup dried rosemary
  • 1/2 cup dried oregano
  • 1/4 cup dried sage

Instructions
 

  • Mix all ingredients together in a large bowl. Put in small containers of your choice for storage.

Notes

Yield is 2 cups of Italian Herb Blend
