Ingredients
Liqueur
3cupsvodka
2 1/2cupsdry vermouth
2cucumberslarge seedless, sliced
2cupsfresh mint leaves
2lemonszest only
Simple Syrup
2cupswhite sugar
2cupswater
Instructions
Add sliced cucumbers, mint leaves and lemon zest into large jar.
Pour vodka and vermouth over ingredients and cover jar.
Place jar in a dark closet or cupboard to infuse for 5 days.
Strain the mixture with cheesecloth over a funnel or a mesh colander after 5 days and return to large jar.
To make Simple Syrup, combine sugar and water in a saucepan and bring to a boil for 1 minute. Let syrup completely cool. Add syrup slowly to the liqueur infusion to your preferred sweetness.
Bottle liqueur using funnel into containers of your choice.
Notes
Yield is 7 cups. Portions size is 3 ounces.If vodka is not your spirit of choice, substitute gin.When infusing, keep the jar out of direct sunlight. I put my infusion in a dark closet. It does not need to be refrigerated because the alcohol will prevent bacteria from growing. Make sure the cucumber and mint are completely submerged in the vodka.After bottling, the liqueur does not need to be refrigerated. The liqueur can be stored for up to 12 months. I keep my bottles in a cool dark location such as a cabinet or pantry.
