Spicy Garlic Kale with Sauteed Peppers
Ingredients
- 2 bunches kale
- 1/2 cup leeks chopped
- 5 tablespoons olive oil
- 1 small onion
- 5 cloves garlic minced
- 2 large peppers bright colored varieties
- 1 teaspoon hot pepper flakes
- salt
- black pepper
Instructions
- Cut greens from kale removing stalks and fibrous rib. Shred into small pieces.
- Place kale in steamer and steam for 10 minutes.
- Heat olive oil over medium heat. When hot, add onions and leeks. Saute until onions are translucent and leeks begin to brown.
- Add garlic and hot pepper flakes, sauté for 1-2 minutes Add peppers and sauté until tender (approximately 4-5 minutes), Remove from heat.
- Add kale to pan and toss ingredients together. Add salt and pepper to taste. Serve either warm or room temperature.
