Spicy Garlic Kale with Sauteed Peppers

leeks

olive oil

garlic

peppers
bright colored varieties

hot pepper flakes

black pepper
Instructions
Cut greens from kale removing stalks and fibrous rib. Shred into small pieces.
Place kale in steamer and steam for 10 minutes.
Heat olive oil over medium heat. When hot, add onions and leeks. Saute until onions are translucent and leeks begin to brown.
Add garlic and hot pepper flakes, sauté for 1-2 minutes Add peppers and sauté until tender (approximately 4-5 minutes), Remove from heat.
Add kale to pan and toss ingredients together. Add salt and pepper to taste. Serve either warm or room temperature.
