Delicious Spicy Garlic Kale with Sautéed Peppers is true perfection! This dish has a fascinating combination of flavors and textures.  Most importantly, the powerhouse taste will satisfy the pickiest of eaters. So you think kale is tough and bitter? Kale is probably one of the most underrated vegetables. So let’s see if I can get rid of that bad reputation!

This recipe brings out the freshness and sweetness of kale.

Start with fresh kale, then add some spicy garlic, colorful sweet peppers and tasty leeks and, voila, delish!!  My hot pepper flakes are a fun addition that you can adjust to your passion for heat. The beautiful rainbow of vegetables in this dish is a delight to your eyes as well as your palate!

Kale is a member of the cruciferous family of vegetables. It is one of nature’s best sources of Vitamins A, C and K, and a good source of potassium, iron and phosphorus. My inspiration for Spicy Garlic Kale with Sautéed Peppers comes from a local CSA (Community Supported Agriculture) newsletter.

Spicy Garlic Kale with Sauteed Peppers

Ingredients Method

Ingredients
  

  • 2 bunches kale
  • 1/2 cup leeks chopped
  • 5 tablespoons olive oil
  • 1 small onion
  • 5 cloves garlic minced
  • 2 large peppers bright colored varieties
  • 1 teaspoon hot pepper flakes
  • salt
  • black pepper

Method
 

  1. Cut greens from kale removing stalks and fibrous rib. Shred into small pieces.

  2. Place kale in steamer and steam for 10 minutes.
  3. Heat olive oil over medium heat. When hot, add onions and leeks. Saute until onions are translucent and leeks begin to brown.
  4. Add garlic and hot pepper flakes, sauté for 1-2 minutes Add peppers and sauté until tender (approximately 4-5 minutes), Remove from heat.
  5. Add kale to pan and toss ingredients together. Add salt and pepper to taste. Serve either warm or room temperature.
