Don’t let the summer slip by without making Mint Cucumber Vodka Liqueur.  This refreshing liqueur (or cocktail) will satisfy your need for a light mildly sweet drink that will quench your thirst. Sip it alone or mix with sparking water (super low cal). The sky is the limit for creativity with mint cucumber flavored vodka.

Botanical infusions…it sounds complicated but is ridiculously easy to make.  All you do is add fresh fruits or vegetables to vodka or another spirit, put it in a jar and let the fresh flavors work their magic.  Add sweetener and, voila, you have created your own masterpiece!

Cucumber and mint with lemon zest are a great combination.  Simple, basic and very classy.  Who knew you could be your own bartender with such little effort, and save lots of money designing your own fancy drinks?

How do you bottle Mint Cucumber Vodka Liqueur?

When the liqueur is ready and you have sweetened the infusion with simple syrup, it is time to bottle. You simply use a funnel to fill your containers of choice.

Here are some ideas for great bottles:

Glass bottles with swing tops

Glass bottles with corks

Reused olive oil bottles

Check out thrift shops and inexpensive shops like The Christmas Tree Shop or Cost Plus World Market for some great bottles.

How to make Mint Cucumber Vodka Liqueur

Add sliced cucumbers, mint leaves and lemon zest into large jar.

Pour vodka and vermouth over ingredients and cover jar.

Place jar in a dark closet or cupboard to infuse for 5 days.

Strain the mixture with cheesecloth over a funnel or a mesh colander after 5 days and return to large jar.

To make Simple Syrup, combine sugar and water in a saucepan and bring to a boil for 1 minute. Let syrup completely cool. Add syrup slowly to the liqueur infusion to your preferred sweetness.

Bottle liqueur using funnel into containers of your choice.

Tips/Recipe Notes

  • Yield is 7 cups. Portions size is 3 ounces.
  • If vodka is not your spirit of choice, substitute gin.
  • When infusing, keep the jar out of direct sunlight. I put my infusion in a dark closet. It does not need to be refrigerated because the alcohol will prevent bacteria from growing. Make sure the cucumber and mint are completely submerged in the vodka.
  • After bottling, the liqueur does not need to be refrigerated.  The liqueur can be stored for up to 12 months.  I keep my bottles in a cool dark location such as a cabinet or pantry.
